Dinner Menu For The Week Of 5/25/09

Memorial Day Weekend- you have to love all the specials that the grocery stores are running this week!  Add that to a couple of great cook-outs with friends and family and the start of summer is here!  Here is our menu for this week:

Monday: Chicken Kabobs on the grill
Tuesday: Chopped Steak
Wednesday: Tacos
Thursday: Oven baked chicken with noodles
Friday: Pizza

Dinner Menu For The Week Of: 5/18/09

Well huge surprise for us; last week we got asked to dinner- twice!  So thanks so much for sharing dinners, friends!  Anyway, that leaves me with some meals that we didn’t make that we are moving to this week.  That is really helpful since it is towards the end of the month and I feel less creative when it comes to dinner planning.  So here are our dinners for this week.

Monday: Pork Chops on the grill
Tuesday: Lemon Teriyaki Chicken
Wednesday: Chicken Parmesan
Thursday: Chicken Primavera
Friday: Salmon Cakes

Quick and Easy Lunches

So recently people I have bumped into are really complimentary of the site- so THANKS for all the great feedback.  One thing that they are asking for are some quick lunch ideas.  I know it is very hard to get into the routine of making and preparing dinner and then using the leftovers right away the next day.  There are a lot of people who don’t even like leftovers.  So, more people want simple, quick fix, budget friendly lunches.  Here are some of my favorite lunches to make:

1-Tortillas with ____ (fill in the blank).  I enjoy going to the store, getting some different kinds of lunch meats and cheeses and filling them up.  You could do a ham and cheese wrap with honey Dijon mustard.  Try roast beef with pepper jack cheese and lettuce.  You could go all veggie or create your own.  Right now, you probably have ranch dressing, some mustard, mayo, and a few veggies laying around waiting for you to create your perfect wrap.  Plus, they make so many flavored wraps it is incredible! 

2-Tuna fish on wheat bread.  I love making tuna.  It is light and super affordable.  I add a little onion and celery to mine with about a tablespoon or two of mayo and there you have it. 

3-Grilled chicken salads.  I LOVE lettuce!  I would eat it for every meal.  I love grilling up some chicken the night before, letting it cool, and then shredding it up and placing it in my salad for the next day.  Here again you can go crazy- add some veggies or even toss in some croutons or even cheese.  It is a healthy meal full of the protein you need to help you make it through the afternoon.

Dinner Menu For The Week Of: 4/12/09

This week we are coming off a big holiday weekend, so most people will be having left overs on Monday.  We travel for the weekend, so our leftovers usually aren’t enough for a big dinner-more like lunches.  So this is what is cooking this week-

Monday: Turkey breast with mashed potatoes and veggies

Tuesday: Chicken tacos with spicy rice

Wednesday: Shepherds’ Pie (all in one meal-love it!)

Thursday: Chicken Scampi with noodles and salad

Friday: Pizza night!  We are helping some friends move so it will be a late night!  Yeah K and J!!!!

 

There will be no recipe this week.  A future show will highlight the shepherd’s pie so I didn’t want to ruin the surprise!

BFC Benefits – Time Saving

I know that I am not the only one out there who looks at their significant other and asks, “What you do want to eat?”  Only to hear the response, “I don’t know, what about you?”  It is a never ending game of- let’s not make a decision.  Time is so precious; why spend your night mulling over dinner choices?  It could already have been decided, if you were to read over BFC Benefits – Planning Your Meals.

Planning your meals is something that I fully believe in and I have to.  Why?  Because it SAVES ME TIME!  Sitting down one afternoon a month for 10-20 minutes is nothing compared to the time I would waste each night just deciding what to cook.  Each night when I get home for work- or even better, before I go to work- I can check the menu, see what we are having and take anything out to thaw that I need to.  It is great!  Then, after my long day- the chicken is ready to go, all I have to do it cook and dinner is served.

Another great time saving tip is once you have your meals planned, you can do any prep work of veggies, etc.. the night before or all in one day.  Then you can just open up the fridge and grab what you need- no prep!  How great is that?

Planning your weekly menu, prepping anything you can beforehand, and just sticking to your plan all all great reasons why budget friendly cooking helps saves us time!
