Tips For Crock Pot Meals

There is something gratifying about putting a whole bunch of ingredients into a crock pot, you turn it on, and a couple minutes later- done. Well, I haven’t been too successful. I want to love my crock pot- but I don’t.

Don’t get me wrong, I have made a pot roast or two- but I have been cooking for Doug and I for almost 4 years now, and I don’t think that I have done my crock pot justice. One time I tried this spicy Mexican chili chicken dish with vegetable and rice and YUCK! The chicken was dry, the vegetables were mush, and the rice was hard. I have never made it since.

We leave pretty early in the morning, so I need something that can be in the crock pot for a long time or something shorter that I can make on the weekend. I am not the only one who wishes she could use their crock pot, right? Maybe it is just me and registering for the crock pot for our wedding was well, a crock (sorry- had to do it).

Well, if there is anyone out there that can produce a super yummy crock pot meal, please share it! I would love to try it out!

Types of Soup, What’s Your Favorite?

Soup is the budget conscience chef’s ideal mate. Soup can be made out of the simplest of ingredients or complex and filling. I like my soups either way. I am lucky enough to have a husband who also enjoys his fair share of soups (except for chili, but I am still working on it).

Soups can either be broth based or cream based. They can include meat or no meat. Tons of veggies or no veggies at all. The possibilities are up to you. Some of my favorite soups are listed on the poll to the right. If you vote, your favorite may win and then you will get to see my recipe for that soup right here on this site!

There is nothing I love more than a great cheese pizza!  As I have gotten older, my taste buds have expanded and last time my husband and I ordered pizza with his parents, my mother-in-law and I even shared a pizza topped with green peppers, onions, and pepperoni!

One thing that I have tried many times to do is make homemade pizza crust.  The times I have made it, it has been ok, but nothing spectacular.  I just want a good recipe for homemade yeast/flour perfection.

Super Bowl Snacks

I do have to admit that every now and then I do enjoy a good football game. Having friends over to watch the game gives me a great excuse to try something new in the kitchen. After all, they are friends and will eat anything I make.

Last year, I tried something new, tortilla soup. It was pretty good as I recall. The broth was light and had a nice hint of spice, the vegetables like corn and green peppers had a nice bite to them, and the homemade tortilla chips for on top were the perfect ending.

With the Super Bowl coming up again this year, it leaves me wondering what to do. Do you go hearty with chunky chili and rolls, light with veggies and dips, or sweet with mini cheesecake bites and cookies? The decisions are so hard! What will you be doing this year?
