Types of Soup, What’s Your Favorite?

11 Feb 2009 In: Let's Share

Soup is the budget conscience chef’s ideal mate. Soup can be made out of the simplest of ingredients or complex and filling. I like my soups either way. I am lucky enough to have a husband who also enjoys his fair share of soups (except for chili, but I am still working on it).

Soups can either be broth based or cream based. They can include meat or no meat. Tons of veggies or no veggies at all. The possibilities are up to you. Some of my favorite soups are listed on the poll to the right. If you vote, your favorite may win and then you will get to see my recipe for that soup right here on this site!

So whether your sip or slurp, eat it hot or cold- go out and get yourself a cup of soup today.  And remember to vote in the poll!

5 Ways To Enjoy Noodles

10 Feb 2009 In: Tips & Ideas

Are noodles getting a bad wrap? I hope not. While teaching, I came across a poem called “Oodles of Noodles.” The author of the poem loved noodles so much  she wished she could eat noodles with every meal.

I would agree, noodles of all kinds, are the perfect anytime meal. There are so many options to serve them. That’s right, there are other options besides serving them with some butter.  Here are some of my ideas for the perfect noodle meal- do you have any?

1. Noodles with butter and fresh cracked pepper
2. Noodles with broccoli and grated Parmesan cheese
3. Noodles with fresh cherry tomatoes (diced) and basil drizzled with olive oil
4. Noodles with marinara sauce and Mozzarella cheese- Baked!
5. Noodles with vegetable spaghetti sauce

I think I am going to have some noodles right now…..

This is the recipe we used for the show.

10×7 non-stick pan
3 Tablespoons butter
1/2 bag-3/4 bag of large marshmallows
5 cups of cinnamon square cereal

Melt butter over medium heat until almost completely melted. Add marshmallows and stir constantly, using either a spoonula or plastic spatula. Once the marshmallows have melted, turn off the heat and add cereal right away. Continue mixing until all the cereal has been coated with marshmallow. Pour mixture into the non-stick pan. Allow to cool slightly before serving.

Dinner Menu for the Week of 02/09/09

5 Feb 2009 In: Menus

One of our goals at BFC is to help people out and give them dinner ideas, on a budget, for the week. I have been planning out our meals at home for a little over 2 years now and it saves me so much time and effort. Plus, it gives me one less thing I have to think about after I get home from work. Each week, you will see a sample menu. Please feel free to use it as a guide or take it for your own.

Having set meals in place will help you with your grocery bill. Before you go to the grocery store, you can check your pantry to see what you have already and what items you need to pick up for dinner that week. Make your list based on the items you need and also include your weekly basics. If you stick to your list, your bill will start to go down because you start buying only the things you need and not something that “looks good” that day.

Here is the menu this week:

Monday – Turkey Alfredo
Tuesday – Tacos
Wednesday – BBQ Sandwiches
Thursday – Spicy Mesquite Chicken Fettucini
Friday – Potato Soup

There is nothing I love more than a great cheese pizza!  As I have gotten older, my taste buds have expanded and last time my husband and I ordered pizza with his parents, my mother-in-law and I even shared a pizza topped with green peppers, onions, and pepperoni!

One thing that I have tried many times to do is make homemade pizza crust.  The times I have made it, it has been ok, but nothing spectacular.  I just want a good recipe for homemade yeast/flour perfection.

Does anyone out there have any tips?  I would love to hear about them- and who knows, maybe your recipe will end up on the show!  Leave your recipes in the comment section or use the contact page.
